Chicago Bar Project “Bite”
Meaning “The Fountains” in Spanish, Las Fuentes is named for the fountain in its enormous beer garden. Las Fuentes encompasses three storefronts with a standard yet colorful restaurant in the corner building and a giant dance floor of ceramic tile and a large wooden island bar take up the next two. The outdoor patio spans the entire width behind all three buildings and seats about 200 at a sea of two and four-tops under colorful plastic doilies and facing a pleasant mural of a Mexican village painted on the north wall of the building serving as the beer garden’s southern end. The complimentary chips & salsa are good (though we like it a bit spicier) and the specialty Molcajete Surtido is intriguing: assorted grilled pieces of top sirloin, cactus paddles, and chicken flavored with home-made chorizo served in a molcajete or stone bowl with our delicious sauce and garnished fresh cheese. The Borrego en Mole Negro also comes recommended: New Zealand rack of baby lamb in Oaxacan black mole that is made with chilhuacle chiles and another delicious 28 ingredients. The Tres Leches dessert is also excellent: three-milk dessert made from sponge cake soaked in evaporated milk, condensed milk and heavy cream. Chicago Bar Project recommendation: wash it all down with Dos Equis Amber or Negro Modelo cerveza.
